Inspired by my heritage, the flavours I’ve created for this recipe really take me back to my Turkish Cypriot roots. My love for Turkish delight and a wonderful dessert called Mahalebi helped me create this honey, rose, and pistachio cream topped jelly. The rose and pistachio macaroon is a twist on a traditional wedding cake gift given to wedding guests.
You will need:
– 3/4 tsp agar agar
– 2 tsp beetroot powder
– 500ml of cold water
– 2 tbsp honey
– 1 tbsp rose water
– A handful of unsalted pistachios
Cream top Jelly
– 1/2 tsp agar agar
– 125 ml cold water
– 125 ml oat cream
– 1 tbsp honey
– 1/2 tbsp rose water
Pistachio & rose macaroons
– 150g unsalted pistachio nuts
– 50g coconut sugar
– 1 tbsp aquafaba
– 1 tsp rose water
